Can’t Beet That

So I decided to try something new: beets. I didn’t think I liked kale, then I tried it again and liked it, why not try beets again too? I’d only ever had them once and they were out of a can and they were gross. Well, everything tastes better fresh, right?

A Pinterest search later had me convinced they are best roasted. I was on a baking spree this evening (I baked chicken breasts, sweet potatoes, and Maple-Bacon Chicken) so I threw my beets in there too.

I peeled them and ate half of one. I didn’t really care for it, which is unusual. I usually love all my veggies, but I thought it tasted like dirt. My memom put it a little more nicely: she said they’re “earthy.”

I didn’t want to waste food, so I mixed them in with my roasted sweet potatoes, some almond milk, a sprinkle of coconut sugar, and a drizzle of maple syrup (I use this kind). It looks a little weird, but tastes really good. My baby ate a whole bowl full. Thank goodness her clothes are dark pink, she got beet-potatoes everywhere!


Anyone got any tips on cooking beets? Any way to make them taste less earthy?
